SWEET RICE PUDDING
 

1 1/2 qts. milk
Dash salt
2 tbsp. lemon extract
2 tbsp. butter
1 lb. rice = 2 1/4 c. rice
1 1/2 c. sugar
8 egg yolks (beat)

First wash rice and let soak in water for short time. Put milk, salt, lemon extract, and butter in pan and bring to a boil starting with a low flame.

Next add rice, do not stir too much. Cook until ingredients boil well and try to absorb liquids (cook about 20 minutes total).

Next add 1 1/2 cups sugar at low flame, take pan off fire and add the beatened egg yolks to mixture. Put pudding on platters and cool a while. Final touch - sprinkle cinnamon over pudding. Makes 2 large platters.
