2 pkgs. yeast 1 c. warm water 1 tsp. sugar 1 c. scalded milk 2 1/2 tsp. salt 1/3 c. sugar 2 eggs, beaten 1/3 c. melted shortening, half butter 6 1/2 to 7 c. flour Soften yeast in lukewarm water with 1 teaspoon sugar. Scald milk. Stir in salt and sugar and cool to lukewarm. When cooled, stir in the yeast mixture combined with beaten eggs. Add 4 cups of flour, beat until smooth. Add cool melted shortening and beat again until smooth. Stir and knead in enough flour to make a smooth elastic dough. Let rise as usual. Bake 20 minutes for loaves at 400 degrees. Then reduce the heat to 350 degrees and bake 20 minutes again. |
