2 pkgs. or yeast cakes
1 c. warm water
1 tsp. sugar
2 1/2 tsp. salt
6 1/2 - 7 c. sifted flour
1/3 c. sugar
2 eggs, beaten
1/3 c. melted shortening or 1/2 c. butter
Soften yeast in warm water with 1 teaspoon sugar. Scald milk and stir in salt and sugar; let cool. When cool, stir in yeast mixture combined with eggs; add 4 cups flour and beat until smooth. Stir and knead in enough flour to make smooth and elastic, but not too stiff.
Place in greased bowl, turn bowl over, cover, let rise in a cozy place (about 85 degrees) for 1 hour, or until double. Turn onto lightly floured board and shape in rolls or three loaves.
Place in greased pans; cover. Let rise in a warm place until double in size (about 45 minutes). Bake rolls 15-20 minutes at 400 degrees; 20 minutes longer for loaves; then reduce heat to 350 degrees and bake 20 minutes longer.
