QUICK STRAWBERRY JAM
 

1 3/4 c. fresh, crushed strawberries (about 1 qt.)
4 c. sugar
2 tbsp. lemon juice
1/2 bottle Certo fruit pectin

Thoroughly mix fresh, crushed berries with sugar and let stand for 10 minutes. Combine lemon juice with Certo and add to fruit mixture. Stir the whole thing for 3 minutes. Yield 5 cups jam. Ladle fresh homemade jam into any scalded jars, 8 ounce or smaller, with screw tops; or use plastic containers with snap lids. Cover immediately and let stand at room temperature for 24 hours to set. Refrigerate or freeze (keeps well).
