SUGAR-FREE CHOCOLATE PUDDING
 

1 qt. (4 c.) lowfat milk
1/4 c. cornstarch
1/2 tsp. salt
1/4 c. unsweetened cocoa
2 tsp. sugar (optional)
2 eggs
6 pkg. Equal
1 tbsp. vanilla

Beat eggs well.

Scald 3 1/2 cups milk until bubbles appear around edge. Allow milk to cool for five minutes; stir 1/4 cup into the two beaten eggs, then add the egg/milk mixture to the scalded, cooled milk.

Mix cornstarch with 1/2 cold cup milk, salt and cocoa. Stir into hot milk. Add remaining ingredients.

Cook over boiling hot water in a double boiler until mixture thickens. Refrigerate for several hours or overnight.

Note: The sugar in this recipe is optional but recommended; it helps to round out the sweetness of the Equal.
