1 c. oil 3 c. sugar 4 eggs 3 c. zucchini, grated 3 c. flour 1 tsp. baking soda 1 1/2 tsp. baking powder 1 1/2 tsp. salt 1/2 c. cocoa 1 tsp. vanilla 1 c. nuts, chopped (optional) Blend oil and sugar. Add eggs and beat well. Sift dry ingredients; add to egg mixture along with zucchini. Add cocoa, vanilla and nuts. Pour into 2 well-greased loaf pans or 4 small loaf pans. Bake at 350 degrees for 1 hour (will be moist inside). |
