PUMPKIN BRAN MUFFINS
 

1 1/2 c. flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
2 egg whites
1 c. canned pumpkin
1 c. High Fiber bran cereal
3/4 c. skim milk
1/2 c. Karo light or dark corn syrup

Use cooking spray or 12 (2 1/2") muffin cups. Combine first six ingredients. In large bowl beat egg whites with whisk. Stir in last four ingredients. Add flour mixture. Blend well. Spoon into cups. Bake at 400 degrees until firm to touch, 18 to 20 minutes. Cool in pan five minutes. Cool after removing from pan to rack. Calories 160 per muffin, Protein 4 grams, Carbohydrates 38 grams, Sodium 290 grams.
