1 1/2 c. flour 1/3 c. granulated sugar 2 tsp. baking powder 1 tsp. cinnamon 1/2 tsp. salt 1 egg 1/2 c. milk 1 c. finely chopped apple (peeled & cored) 1/4 c. butter, melted 1/3 c. nuts, chopped (use your favorite kind) 1/4 c. firmly packed brown sugar Combine flour, granulated sugar, baking powder, 1/2 teaspoon cinnamon and salt in large bowl. In a separate bowl, beat egg with milk then stir in apple and butter. Add all at once to flour mixture; stir until just moistened (batter will be very stiff). Fill 12 buttered 2 1/2 inch muffin cups 2/3 full. Combine nuts, brown sugar and remaining 1/2 teaspoon cinnamon. Sprinkle mixture over muffin tops. Bake in a 375 degree oven for 15 to 20 minutes. Remove from pan immediately. Serve warm. Makes 1 dozen. Happy baking! |
