JIFFY - OATMEAL BREAD
 

4 tsp. salt
1/2 c. honey (molasses or corn syrup may be substituted)
1 heaping tbsp. sugar
1/3 c. oil
1 c. rolled oats
2 c. boiling water
2 eggs, beaten
2 pkg. yeast
6-7 c. flour

Mix honey, sugar, salt, oil and oats in large bowl. Add boiling water. When mix has cooled to lukewarm add yeast and eggs. When yeast has dissolved add flour and mix. Leave in bowl, cover and let sit in warm place for 20 minutes. Turn out onto floured surface (dough will be sticky). Knead, adding more flour until it doesn't stick to your hands and is soft and workable.

Divide into 2 loaves and put into greased loaf pans. Cover and let rise until doubled. Bake at 350 degrees for 30-35 minutes. Remove from oven brush with butter, let cool.
