APPLE MUFFINS
 

Preheat oven to 400 degrees.

Apple Mixture:
1 1/2 tsp. cinnamon
2 c. peeled, chopped apples
1 1/2 tbsp. vegetable oil
3 tbsp. sugar

Blend ingredients and chill in refrigerator.

Muffin Mixture:
2 eggs
1 c. milk
1/2 c vegetable oil
3 c. flour
1 c. sugar
4 tsp. baking powder
1 tsp. salt

Beat eggs with fork, stir in milk and oil. Blend dry ingredients and stir into wet mixture until flour is moistened. Add apple mixture and pour into greased muffin pans. Optional: Top with nut crunch topping. Bake at 400 degrees for 20 to 25 minutes.

Nut Crunch Topping:
2/3 c. sugar
2/3 c. chopped nuts
1/3 c. brown sugar
1 tsp. cinnamon

Sprinkle on top of muffins before you bake.
