BUTTERMILK BRAN MUFFINS
 

1/4 c. butter, melted
1 egg
3/4 c. buttermilk
1/3 c. light molasses
2 c. bran cereal
2/3 c. sifted flour
1/3 c. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/8-1/4 tsp. allspice
1/3 c. raisins

Preheat oven to 400 degrees. Beat egg in medium bowl. Blend in buttermilk and molasses. Stir in bran. Let stand 3-5 minutes. Sift dry ingredients. Stir in raisins to dry ingredients. Stir butter in bran. Add dry ingredients to bran mixture all at once, just until moistened. Spray muffin cups, fill 2/3 full. Bake 20-25 minutes.
