OATMEAL BREAD (SARAH'S FAVORITE!)
 

1/4 c. or 1/3 c. brown sugar, to taste
1 c. oatmeal
2 c. boiling water
1 1/2 tsp. salt, optional
3 tbsp. shortening, vegetable oil or butter can be used instead
1 1/2 tbsp. sugar
1 pkg. dry yeast
1/4 c. warm water
3 or 4 c. flour

Mix brown sugar, oatmeal, salt and boiling water in a large bowl. Add shortening and mix gently. Set aside to cool, until warm. In small bowl dissolve sugar and yeast in warm water, and then add to large bowl oatmeal mixture. Add approximately 3 cups flour and work in. Knead, adding more flour as necessary. Let rise until double in size. Punch down. Make into 2 small loaves or rolls and place in lightly greased pans. Bake at 350 degrees for 25 to 30 minutes.

This recipe works great for mixers with dough hooks. The mixing, working in and kneading can all be done in one bowl. No mess.
