CORN DODGERS
 

2 c. cornmeal
1 tsp. salt
1 tsp. baking powder
Pinch of baking soda
3 c. boiling water
1 tbsp. vegetable oil

Blend oil with cornmeal. Stir in salt, baking powder and baking soda. Add boiling water, stirring rapidly into light dough. Dip hands in cold water and shape into patties. Bake at 400 degrees until brown, drain on paper towels.
