REFRIGERATOR CINNAMON ROLLS & ICING
 

1 pkg. dry yeast
1 1/2 c. warm water
1 c. unseasoned mashed potatoes
2/3 c. sugar
2/3 c. real butter, melted
2 eggs
1 1/2 tsp. salt
6 c. flour

In large mixing bowl dissolve yeast in warm water. Stir in next 5 ingredients and 3 cups flour. Beat well. Add remaining flour. Knead well on floured surface and returned to greased bowl. Refrigerate overnight and no longer than 5 days.

Can be used for dinner rolls or cinnamon rolls. For cinnamon rolls: Roll into rectangle, spread with butter. Sprinkle with sugar and cinnamon. Roll up and slice. Place on greased cookie sheets. Let rise until double. Bake at 375 degrees for 12 minutes. Makes 4 dozen. Frost with powdered sugar icing.

ICING:

1/2 stick butter, melted
4 tbsp. milk
4 c. powdered sugar
1/2 tsp. vanilla

Beat well.
