2 c. flour 3/4 c. sugar 2 tsp. baking powder 1/2 tsp. salt 1/3 c. oil 1 egg, beaten 1 tsp. grated orange rind (opt.) 1/2 c. orange juice 1 c. chopped cranberries 1/4 c. chopped walnuts Grease muffin tins. Mix flour, sugar, baking powder and salt in a bowl. In a small bowl, beat egg, oil, orange juice and rind. Mix together. Add cranberries and nuts. Bake at 400 degrees for 20 minutes. Makes a dozen. (I freeze cranberries for the winter, then I cut them in halves and shake the seeds out before cooking.) |
