CRANBERRY-NUT MUFFINS
 

2 c. all purpose flour
1 tbsp. baking powder
1/4 tsp. salt
2/3 c. granulated sugar
1/2 c. butter
1 c. orange juice
1 egg, lightly beaten
1 c. chopped cranberries
1 c. chopped walnuts
1 tbsp. grated orange rind

Preheat oven to 400 degrees. Grease 12 (3 x 1 1/2) muffin cups. In a large bowl, stir together flour, baking powder, salt and sugar. Melt butter in a saucepan over low heat. Add orange juice and egg. Stir butter mixture into flour mixture. Fold in cranberries, walnuts and orange rind. Spoon batter evenly into prepared muffin cups.

Bake for 25 to 30 minutes or until cake tester inserted in center of one muffin comes out clean. Remove muffin to wire rack. Cool 5 minutes before removing muffins from cups; finish cooling on racks.
