SUGAR FREE PINEAPPLE BREAD
 

4 slices whole wheat or white bread
1 1/3 c. non fat dry powdered sugar
12 tsp. brown sugar substitute
4 tsp. cinnamon
2 tsp. orange rind (opt.)
1 tsp. baking soda
4 tsp. baking powder
4 eggs
1 (16 oz.) can crushed unsweetened pineapple, with juice
2 tsp. butter extract (flavoring)

Crumble bread in blender. Combine bread crumbs with all dry ingredients in large bowl. In separate bowl, combine eggs, butter extract, and pineapple. Blend in bread mixture. Bake in an 8" square pan, sprayed with Pam. Bake 30 to 35 minutes at 350 degrees. Yield: 24 squares.
