SUGAR-FREE PEAR MUFFINS
 

3 c. blended pears
2 lg. eggs
4 tbsp. oil
4 tsp. baking powder
2 tsp. baking soda
1 tsp. nutmeg
2 c. chopped dates
4 c. flour

In a large bowl, beat together pears, eggs, and oil. Next, add the flour, baking powder, baking soda and nutmeg. Stir in dates. Spoon into oiled and floured muffin wells and sprinkle with additional nutmeg. Bake in a 350 degree oven for 15 minutes. Cool on wire racks. Makes 24 muffins.
