2 c. flour 1 c. sugar 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1 tsp. salt 1/4 c. soft butter 1 tbsp. grated orange rind 3/4 c. orange juice 1 egg 1/2 c. nuts, chopped 1 1/2 c. cranberries Mix all ingredients. Fill muffin tins 3/4 full. Bake at 350 degrees for 25 minutes. NOTE: I use baking cups. Yield: 12 muffins. |
