BANANA BREAD
 

1 c. sugar
1/3 c. butter
2 eggs
3 to 4 med. bananas, mashed
1/3 c. water
1 2/3 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/4 tsp. baking powder
1/2 c. chopped nuts (optional)
1/2 tsp. cinnamon
Pinch of nutmeg (optional)

Heat oven to 350 degrees. Grease bottom only of loaf pan (or 3 mini loaf pans). Mix sugar and butter in 2 1/2 quart bowl. Stir in eggs until blended. Add bananas and water; beat 30 seconds. Stir in remaining ingredients except nuts until moistened, stir in nuts. Pour into pan and bake until toothpick inserted into center comes out clean (about 55 to 60 minutes, less time for mini-loaves). Let cool 5 minutes and remove from pan. let cool completely before slicing.
