1 c. flour, sifted 1 tsp. baking powder 1/2 tsp. salt 4 tbsp. sugar 1 egg 5 tbsp. milk 1 tbsp. melted fat 1 2/3 c. cream style corn Fat for frying Sift dry ingredients together; beat eggs, add milk and melted fat. Add to dry ingredients, beat until smooth. Stir in corn and let stand for 5 to 10 minutes; heat fat for frying, drop by tablespoon into hot fat, fry until brown. Drain on paper towel. Serve hot. Makes approximately 24 fritters. |
