1 1/2 c. flour 2 tsp. baking powder 1/2 tsp. salt 1/2 tsp. cinnamon 1/2 c. sugar 1/2 c. finely chopped apricots 1/2 c. chopped walnuts 1 egg, slightly beaten 1 c. milk 1/4 c. oil Combine first 5 ingredients in bowl and mix well. Stir in apricots and nuts. Combine remaining ingredients and add to dry ingredients. Stir until moistened. Spoon into greased muffin tins (or paper lined) and fill about 2/3 full. Bake 25 minutes in 350 degree oven. |
