SUGAR FREE (BANANA-APPLE BREAD)
 

1/2 c. reduced-calorie butter
2 tbsp. sugar substitute
2 eggs or 1/2 c. egg beaters
1 3/4 c. self rising flour
3 med. bananas, chopped
1 c. peeled coarsely chopped apple
Vegetable cooking spray

1. Cream butter in a large bowl, gradually add sugar substitute, beating at medium speed of an electric mixer until light and fluffy. Add eggs and beat until thick and lemon colored. 2. Add flour to creamed mixture, mixing well. Fold in bananas and apple. 3. Spoon batter into an 8 1/2 x 4 1/2 x 3 inch loaf pan coated with cooking spray. 4. Bake at 350 degrees for 1 hour and 5 minutes or until a toothpick inserted in center comes out clean. 16 servings. Each serving = 1 starch; 1 fat
