3 tbsp. brown sugar
1 tbsp. sour cream
1/3 c. nuts, chopped
Mash bananas. In a medium bowl, STIR together egg, sugar, oil and bananas until well blended. Add pancake mix, stirring just until moistened. Line muffin tin with paper baking cups, fill 2/3 full.
OPTIONAL TOPPING: Stir all together and drop 1 teaspoon on each muffin, before baking. Bake at 400 degrees for 12 to 15 minutes until golden brown. Makes 12 muffins.
