1 3/4 c. flour 1 1/4 c. oatmeal 3 eggs 3/4 c. sugar 1/3 c. vegetable oil 1 tsp. vanilla 1 1/2 c. mashed bananas (3 med.), ripe 3 tbsp. milk 1/4 c. chopped nuts In large bowl stir together flour and oatmeal; set aside. In small mixer bowl beat eggs. Add sugar, oil, and vanilla; mix well. In a small bowl combine banana and milk. Add banana mixture to egg mixture alternately with dry ingredients. Stir in nuts. Pour batter into a greased 9 x 5 x 3 loaf pan. Bake at 350 degrees for 55-60 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan. Wrap and store overnight for easier slicing. Makes 1 loaf. |
