Makes 12 large or 4 dozen mini muffins. 1 c. sugar 2 eggs 2 c. flour 1 tsp. baking soda 1/8 tsp. salt 3 ripe bananas, mashed 1 tsp. vanilla
Preheat oven to 425 degrees. Combine butter and sugar. Add eggs, one at a time, beating well after each. Combine flour, soda, and salt; add to creamed mixture. Fold in bananas and vanilla. Pour into paper lined or greased muffin tins. Bake for 20 minutes. For mini muffins: Bake at 300 degrees for 15 minutes.
