CRANBERRY DATE MUFFINS
 

1 3/4 c. flour
1/3 c. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 c. sour cream
1 egg
1/2 c. cranberries, coarsely chopped
1/2 c. dates, coarsely chopped
1/2 c. walnuts

Preheat oven to 400 degrees. Grease nine 3 inch muffin pan. In large bowl, mix flour, sugar, baking powder, baking soda and salt. In small bowl, with fork, blend sour cream with egg. With fork, stir sour cream mixture into flour mixture just until blended. Batter will be thick. Fold in berries, dates and nuts. Do not over beat. Fill muffin pan. Bake 18 minutes or until browned. Cool. Makes 9.
