BANANA FRITTERS
 

3/4 c. flour
3 tbsp. sugar
1/8 tsp. cinnamon
1/2 tsp. baking powder
2 eggs
1/2 c. milk
3/4 c. mashed ripe bananas
1/2 tsp. vanilla
Peanut oil or salad oil

In a large bowl, mix flour, sugar, cinnamon and baking powder. In another bowl, beat together eggs, milk, mashed bananas and vanilla. Stir liquid ingredients all at once into flour mixture, stirring until smooth. Let batter rest 30 minutes.

Pour oil into a large saucepan to half full and heat over medium heat to 350 degrees. Drop batter by tablespoons into hot oil. Cook 5 minutes or until golden brown. Repeat with remaining batter. Keep warm in a 250 degree oven. To serve, sprinkle with confectioners' sugar. Makes 20 fritters.
