CREAM CHEESE MUFFINS
 

2 (8 oz.) pkgs. cream cheese
1 c. sugar
2 eggs
1/4 tsp. grated lemon rind (optional)
Vanilla wafers
Paper muffin cups
Pie filling (your choice)

Mix cream cheese and sugar until smooth. In separate bowl with fork, beat eggs well. Add cream cheese mixture to eggs and mix well. Place vanilla wafer in bottom of paper lined muffin tin, fill each muffin tin to the top. Bake for 20 minutes at 350 degrees. Remove from oven, cool and top with pie filling.
