1 c. sugar 1 egg 4 sm. or 2 lg. ripe bananas (1 cup mashed) 1 tsp. vanilla 2 c. flour 2 tsp. baking powder 1 c. nuts, chopped 1/2 c. shortening 1/2 c. milk 1/4 tsp. baking soda Dash of salt Mix together sugar, egg and shortening. Add bananas, milk and vanilla. Add flour, baking soda, salt and baking powder; mix until moist. Add nuts. Grease and flour loaf pan. Add batter. Bake in 350 degree oven for 1 hour and 15 minutes until toothpick comes out clean. Don't overbake. Cool for 20 minutes. Remove from pan. Finish cooling on rack. Wrap tightly with foil to keep moist. |
