BANANA MUFFINS (BREAD)
 

1/2 c. shortening
1 c. sugar
3 lg. bananas, crushed
2/3 c. skim milk (or water)
2 eggs, beaten
2 1/2 c. flour
1/2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder

Cream sugar and shortening. Add milk and eggs. Sift dry ingredients and mix alternately with bananas.

Bake in moderate (350°F.) oven for 1 1/2 hours, for bread and less time for muffins.
