CORN SHORTCAKE
 

1 lg. onion, diced
1 (8 oz.) plain yogurt or sour cream
1 c. grated cheese
1 box Jiffy corn muffin mix
1 can of creamed corn
1/3 c. milk

Mix corn, milk, and muffin mix and pour into greased 9 x 12 inch baking dish. Mix cheese, yogurt, and onion. Dot over muffin mix mixture. Bake at 425 degrees for 25-30 minutes. Let stand 10 minutes before serving.
