PANNUKAKKU OR KROPAU (FINNISH
PANCACKE)
 

1 stick butter
4 eggs
1/4 c. sugar
1/2 tsp. salt
1 1/3 c. flour
1 (12 oz.) can evaporated milk
2 1/2 c. milk

Melt butter in 9x13 inch pan. Beat eggs well. Add sugar and salt. Add flour to egg mixture. Add half of melted butter, leave remainder of butter in pan. Slowly add both milks to mixture. Mix well. Pour into the 9x13 inch pan. Bake 1 hour at 375 degrees. Let set for 20-30 minutes before eating. Serve with syrup, if desired.
