RAISIN SANDWICHES
 

1 whole lemon, quartered and seeded
1 1/2 c. white raisins
Mayonnaise
Thinly sliced white or whole wheat bread, crusts trimmed

Grind together the lemon (peel and all) and raisins. (This can be done in a food processor with a metal blade.) Mix with enough mayonnaise to make it spreadable. (The mixture will keep in refrigerator without mayonnaise, so mix only the amount you need.) Spread on thinly sliced bread to make tea sandwiches, cut in half. This is an old fashioned delicacy, nice for tea parties and picnics. Makes 2-3 dozen.
