ZUCCHINI-WALNUT MUFFINS
 

1 c. all purpose flour
3/4 c. whole wheat flour
1/2 c. firmly packed brown sugar
1 tbsp. baking powder
3/4 tsp. cinnamon
1/4 tsp. salt
2 lg. eggs
3/4 c. milk
1/2 c. butter, melted
1 c. shredded zucchini
1 c. chopped walnuts
1/2 c. dark raisins

In large bowl combine flours, brown sugar, baking powder, cinnamon and salt. In medium bowl whisk eggs, milk and melted butter; stir in zucchini, walnuts and raisins. Pour egg mixture into dry ingredients.

Stir just until mixed. Spoon batter into 12 greased, 2 1/2 inch muffin cups. Bake in a preheated 375 degree oven for 20 minutes or until golden.
