2 1/4 c. flour 1 2/3 c. sugar 1 tsp. salt 1 1/4 tsp. baking powder 1 1/4 tsp. soda 2/3 c. skim milk 1/2 c. plain nonfat yogurt 2 tbsp. vegetable oil 1 1/4 tsp. baking powder 2/3 c. egg whites or egg beaters 1 1/4 c. mashed ripe bananas 2/3 c. chopped nuts Heat oven to 350 degrees. Pam loaf pan. Measure all ingredients into large mixer bowl and blend 1/2 minutes on low speed, scraping bowl constantly. Beat 3 minutes on high and pour into 2 pans. Bake 50 minutes to 1 hour or until wooden pick inserted in center comes out clean. Size: 2 (7 x 3 inch) loaf pans. |
