Waffles: Waffles will stick if the iron is too hot or if it isn't hot enough. If your waffle iron has no temperature control, preheat it about 8 minutes, or until a drop of water forms tiny balls and "plays" on the grid. Use at least 3 tablespoons of shortening for each cup of flour. And no peeking 'til steaming stops! 1 1/4 cups milk 3/4 cup flour; 1 1/2 cups corn meal 1/2 cup shortening, melted 2 eggs 3 tsps. baking powder 2 tbsps. sugar 1 tsp. salt Sift flour; measure; add baking powder, salt and sugar. Sift again. Beat egg yolks; add milk and shortening. Pour into flour mixture; mix just enough to moisten dry ingredients. Fold in beaten egg whites. Bake.
