BUTTERMILK FRIED CHICKEN
 

2 (1 1/2 lb.) fryer
2 c. all purpose flour
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1/2 tsp. salt
1/4 tsp. pepper
3 c. buttermilk
Fat for deep frying

Cut chicken in several pieces. Put flour in a paper bag. Add baking powder, baking soda, salt and pepper. Dip each piece of chicken in the buttermilk, then place in the flour mixture in bag. Shake well so each piece is completely covered with the flour mixture. Place chicken into real hot fat fry until golden brown and thoroughly cooked.
