ITALIAN CHICKEN CACCIATORE
 

1/2 c. olive oil (or less)
4-5 c. cubed chicken (3 lb.)
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. paprika
1/2 c. sherry wine, optional
1 onion, diced
1 med. green pepper, diced
1 clove garlic, minced
3 1/2 c. canned tomatoes
1/2 c. mushrooms, diced

Brown chicken in olive oil. Add seasonings and all vegetables except tomatoes and mushrooms. Saute until soft.

Place mixture in greased large casserole after stirring in tomatoes and mushrooms. Bake 30-35 minutes at 350 degrees.

May add sherry wine before serving if desired. Very good without.
