BROILED CHICKEN BREASTS WITH PESTO
SAUCE
 

4 chicken breast halves, with bone
3 tbsp. fresh lemon juice
1/4 tsp. salt
1/8 tsp. fresh ground pepper
1/4 c. minced fresh basil
1/4 c. grated Parmesan cheese
1 garlic clove, crushed through a press
2 tbsp. olive oil

Preheat broiler. Brush chicken with lemon juice. Season with salt and pepper. Place chicken, bone side up, on broiler pan and broil about 8 inches from heat for 5 minutes. Turn and broil 5 minutes longer. In blender or food processor, combine basil, cheese, garlic and oil; mix until well blended. Spread over top of each chicken breast. Broil 5 to 10 minutes longer, until chicken is opaque throughout but still juicy.
