NEW ENGLAND TURKEY OR BAKED STUFFED
COD
 

Buy a medium sized whole fish (3 to 7 pounds) or a large center cut of cod. 1/2 pound salt pork

1. Make 2 cups of your favorite stuffing.

2. Clean and split a whole cod and fill it with your favorite stuffing. Sew up the opening or secure with toothpicks. Arrange it on an oiled baking dish, cover with thin slices of salt pork from heat to tail. Bake at 400 degrees for 25 to 35 minutes, allowing 10 minutes per pound. Baste with pan juices during baking. Remove to a hot platter, garnish with plain boiled potatoes and green peas and serve with an egg sauce or parsley sauce. Pour over fish.

EGG SAUCE:

2 tbsp. butter
2 tbsp. flour
1 c. fish stock or clam juice
1 egg yolk
1/4 c. heavy cream
Salt & pepper
1/2 c. sauteed mushrooms
1 tbsp. chopped parsley
2 tbsp. white wine

Melt butter in saucepan, then whisk in flour and stock. Remove from fire and add slightly beaten egg yolk, salt and pepper. Heat to just below simmer, remove from heat and add wine, mushrooms and parsley. Serves 6.
