STIR FRY CHICKEN SLICES WITH
PINEAPPLES
 

8 oz. chicken meat
1 c. pineapples (diced)
1 tbsp. ginger root or scallion
1/2 c. red pepper (diced)
1/2 c. green pepper (diced)
1 tsp. mashed garlic
3 stalks green onion (sectioned)

SEASONING:

1/2 tbsp. corn flour
1 tsp. wine
1/4 tsp. sugar
1/3 tsp. salt
1/2 tsp. chicken powder
Pinch of pepper
1 tbsp. oil

SAUCE:

3/4 tsp. corn flour
1/4 tsp. salt
1/4 tsp. sugar
Pinch of sesame oil
Pinch of pepper
3 tbsp. water

Shred chicken meat. Marinate with seasoning for 10 minutes. Put in warm oil or stir fry with 2 tablespoons oil until cooked.

Saute garlic with 2 tablespoons oil. Add chicken, pineapples, ginger root (or scallion) and peppers. Mix well, sprinkle with 2 tablespoons wine. Put in green onion. Mix well and add sauce. Bring to boil and serve.
