POTATO CHIP CHICKEN CASSEROLE
 

2 c. or more boned, cooked, cut-up chicken
1 c. mayonnaise
2 tbsp. lemon juice

Stir these together - then add:

1/2 c. slivered almonds
2 tbsp. minced onion
2 tbsp. chopped pimento
1/3 c. chopped green bell pepper
2 c. chopped celery
Water chestnuts (optional)

Mix gently all together. Add 8 ounce package crushed RIPPLE potato chips, not to finely crushed. (Save a few for the top.) Put in casserole dish, sprinkle 1/3 cup Parmesan cheese on top, top that with a few crushed potato chips, bake 45 minutes or until it bubbles and is golden brown. This is very good and it uses up the crumbs in the bottom of the potato chip bag!!
