FIVE SPICE ROAST CHICKEN
 

4 to 5 lbs. fryer or roasting chicken, rinsed
Water
1/2 can of beer
1 tbsp. rock salt
2 tbsp. garlic salt
1 tsp. five spice powder
2 to 3 tbsp. honey

Put whole chicken into a pot and add just enough water to cover; add beer and rock salt; marinate for 8 hours. Remove chicken from marinade and rub garlic salt and five spice powder inside and out. Let stand 4 hours. Rub honey over chicken just before roasting on a rack in a 375 degree oven for 1 hour. Baste with 1 tablespoon honey after the first 1/2 hour. Cut into small pieces before serving.

COMMENTARY: There are many ways to roast a chicken, but this five spice roast gives a distinct Chinese flavor. It is crisp outside, moist inside and makes an excellent main dish. The key steps to success are the long marinating time and thorough rubbing of the garlic salt and five spice powder into the chicken to allow the flavor to penetrate deeply.
