SPINACH-STUFFED TURKEY MEAT LOAF
 

1 (10 oz.) pkg. frozen chopped spinach
1 c. coarsely chopped mushrooms
1/4 c. chopped onions
1/2 c. (2 oz.) shredded Swiss cheese, divided
1/4 c. (1 oz.) grated Parmesan cheese
1 lb. ground turkey
3/4 c. rolled oats
1/2 c. skim milk
1 egg white, slightly beaten
1 tsp. Italian seasoning
1/2 tsp. salt
1/4 tsp. pepper

Preheat oven to 375 degrees. In saucepan or skillet place spinach, mushrooms, and onion. Cover and let cook 4 to 5 minutes or until tender. Drain any liquid. remove from heat; stir in 1/4 cup Swiss cheese and Parmesan cheese. Set aside.

Combine remaining ingredients except 1/4 cup Swiss cheese; mix well. Spoon 2/3 of meat mixture lengthwise down center of 11 x 7 inch glass baking dish. Make a deep indentation down center of meat; fill with spinach mixture. Top with remaining meat to encase spinach.

Bake 30 to 35 minutes. Sprinkle with remaining Swiss cheese. Return to oven 1 to 2 minutes. Let stand 5 minutes before slicing.
