2 c. diced chicken breasts 1 tbsp. lemon juice 3/4 c. Swiss cheese chunks 1 c. celery chunks 3/4 c. seedless grapes, halved 3/4 c. pineapple chunks DRESSING: 1/2 c. mayonnaise, low calorie 1/2 c. sour cream, low calorie 2 tbsp. honey OPTIONAL: Cherry tomatoes 1 c. cooked pasta Toasted, slivered almonds Combine chicken and lemon juice. Add cheese, celery and fruit. Toss, cover and refrigerate. Just before serving, combine mayonnaise, sour cream and honey and add to salad. Serve over lettuce, garnish with cherry tomatoes and toasted slivered almonds. For a heartier salad, add pasta and extra dressing. |
