GARLIC GRILLED CHICKEN
 

2 boneless chicken breasts, skinned & halved
1 c. picante sauce (mild or hot)
2 tbsp. oil
1 tbsp. lime juice
2 cloves garlic, minced (about 1/4 tsp. garlic powder)
1/2 tsp. each of ground cumin, crushed oregano

Pound chicken breasts thin, cut into 1 inch strips. Combine remaining ingredients, mix well, add chicken strips and marinate 2 to 3 hours or overnight. Turn occasionally. Thread chicken pieces onto skewers, accordian style. Place on barbecue (low heat) or broiler pan for about 10 minutes turning and basting frequently with marinade. Marinade can be boiled and served over hot rice.
