FRICASSEED CHICKEN - JAMAICA STYLE
 

1 (5-6 lb. in weight) chicken, cut to size
1 clove garlic, chopped fine
Black pepper to taste
Oil for frying
1 lg. onion, sliced
2 yellow onions, chopped coarsely
3 med. sized tomatoes, coarsely chopped
Salt to taste
Powdered ginger
1/2 tsp. paprika for seasoning

Rinse chicken overnight. Dry and season with sliced onion, black pepper, salt and powdered ginger. Store in refrigerator. Next day remove all seasonings and fry chicken until brown. Lower heat, add chopped onions, tomatoes, garlic, salt, paprika and 3 tablespoons hot water. Cover and simmer, adding small amount of water as needed. Chicken should be fork tender when cooked. Add 1 tablespoon butter and serve. Serves 6.
