LIME AND ORANGE CHICKEN
 

2 tbsp. fresh lime juice
2 tbsp. fresh orange juice
1 tbsp. olive oil
4 chicken halves on bones (skin removed)
1 tbsp. minced red onion or shallot
1/2 tsp. dried basil or oregano, crushed
1/4 tsp. salt
Freshly ground black pepper to taste

Whisk together lime juice and orange juice and olive oil. Place chicken in glass pan and pour the marinate over. Sprinkle with onion and basil. Cover and marinate at room temperature 20 minutes or refrigerate for longer.

Remove chicken from the marinate and place on a rack in a baking pan. Sprinkle with salt and pepper. Bake in a preheated oven at 375 degrees for 30 to 35 minutes. Baste once during cooking time with the marinate. (Can also be cooked on grill.)
