SWEET AND SOUR CHICKEN
 

2 whole chicken breasts - boned, skinned and cut into 1 inch cubes

BATTER:

1/4 c. cornstarch
1/2 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
3/4 c. cold water

SWEET AND SOUR SAUCE:

3/4 c. sugar
3 tbsp. ketchup
2 tbsp. vinegar (rice vinegar is best)
2 tbsp. cornstarch
3/4 c. cold water

Heat oil in electric skillet or frying pan to 375. Put chicken into batter and place in oil. Turn once and cook until golden brown - approximately 1 minute. Drain grease and place in shallow casserole dish.

Sweet and Sour Sauce: Heat sugar, vinegar and ketchup until sugar is dissolved. Add cornstarch and water. Cook 5 to 10 minutes on medium heat. After cooking sauce pour it over chicken and garnish with pineapple chunks and green onions and sesame seeds.
